Step-by-step preparation:
Chocolate base: In a small bowl, mix cocoa powder with cold water until a thick paste without lumps is formed.
Thickener: Add starch to this mixture and stir thoroughly until smooth.
Milk preparation: Pour milk into a saucepan, add sugar and a pinch of salt. Put on the fire and bring almost to the boil (the first bubbles should appear).
Thickening magic: Reduce the heat to a minimum. Pour the cocoa and starch mixture into the hot milk in a thin stream, constantly working intensively with a whisk or spoon.
Final stage: Continue to cook over low heat, stirring constantly, for 1–2 minutes until slightly thickened. Bring to a boil (literally for 5 seconds) so that the starch “works”, and remove from heat.
Flavor: Add vanilla, stir again.
Serving: Pour into a beautiful clear cup or glass.
