Step-by-step preparation:

Preparing the cheese: Grind the cheese with a blender to a paste or rub it through a fine sieve. This is important so that the donuts have a uniform structure and do not fall apart.

Kneading the dough: Add the egg, sugar, a pinch of salt and slaked soda to the cheese. Gradually add the sifted flour. Knead a soft, slightly sticky dough.

Tip: Do not oversaturate the dough with flour, otherwise the balls will be "rubbery".

Preparing the filling: Wash the prunes and dry them thoroughly with a paper towel. If the fruits are too large, cut them in half. If the prunes are hard, soak them in warm water for 10 minutes, then dry them.

Shaping: Moisten your hands with oil or water. Pinch off a piece of dough, make a patty, place a prune in the center and form a neat ball slightly larger than a walnut.

Frying: Heat the oil in a deep saucepan or saucepan. You can check the temperature with a piece of dough - bubbles should appear around it.

Reduce the heat to below medium. Carefully lower the balls into the oil. Fry, stirring constantly, until evenly golden brown (about 3-5 minutes). A slow fire ensures that the cheese is baked inside.

Removing fat: Place the finished balls on paper towels to remove excess oil.

Serving: Generously sprinkle the warm balls with powdered sugar and garnish with fresh mint.
